Compostela Valley is dubbed the ‘golden province’ due to its abundance of gold and silver mines. The immensely high altitude (6,500 feet above sea level) means that there is less tannin in the cacao grown in this area, making the chocolate less bitter. The Julius Estate proudly uses only natural compost as fertilizers on their cacao trees. We lovingly roast the beans and then stone grind, c onch and temper the chocolate to attain the tasting notes of dried strawberry and pecan. Made only with 2 ingredients (premium cacao beans and sugar), these are the natural flavors of the bean not added flavors
