Originally from Auvergne region in France, the Bleu dAuvergne has a yellow-orange rind with a white down. The cheese itself is moist and shiny. It also has green molds which develops in the cavities that bring the umami in it. Its flavours are mainly salty with aromas of blue cheese and mushroom. It is a strong cheese. It is a good cheese to pair with a sweet wine.
