Laped Mirror Glass White Glaze
Mirror Glass White is a premium extra-covering white mirror glaze that delivers a flawless, natural white finish — without titanium dioxide.
Perfect for semifreddos, mousse cakes, and entremets, it provides superior coverage even over dark bases and can be tinted to create custom colors.
How to Use:
1) Heat in the microwave or bain-marie to 60°C (140°F), stirring gently to even out texture.
2) Cool to 35–50°C (95–122°F) for glazing consistency.
3) Pour over a frozen cake free from frost.
4) Let drip, then remove excess glaze with a spatula.
5) Stabilize in the freezer or blast chiller for 30 minutes.
6) Store at +4°C (39°F) or -20°C (-4°F) for longer shelf life.
Customization Options:
- Add 10g water-soluble food color per 1kg for bright tones.
- Blend with 20–40g fat pastes (like pistachio) + 30–60g water for flavor.
- Mix with 30–50g concentrate pastes (caramel, cookie, etc.) for rich taste.
